General kitchen help: Back of house employees may spend time behind the hot line cooking on sauté ,grill,fry foods ,prepping foods for service including chopping slicing food items for ready to cook stations as well as general cleaning duties that everyone is responsible for and some dish-washing using machines. Depending on the students knowledge of the nature of the business they may be working in one position and/or rotating throughout many positions in the kitchen area to have a happy clean fresh work environment that is enjoyable to work in.
The kitchen staff is responsible for ensuring all areas of the kitchen, food prep, and food storage areas are clean and properly sanitized. This includes washing dishes and cooking equipment, cleaning floors, sanitizing countertops and cutting boards, and maintaining all areas to health code standards.
